Salt Cod


- 1 lb. of salt cod
- 1/4 lb. of salt lard


  



Soak the salt cod overnight. Put the salt cod in a pot of cold water and boil. When the water boils throw it out and begin again with fresh water. Do this several times. Let simmer for about 20 minutes. In a frying pan, put the salt lard and a little bit of water. Let it boil for 2 or 3 minutes then throw away the water. Fry the lard until it becomes crispy. When the fish is cooked, drain and serve with boiled potatoes and the fried lard.
