Taffy or Toffee
(Tamarin ou Tire)


- 2 cups of sugar
- 1 cup of water
- 2 tsp. of cream of tartar
- 3 tbsp. of vinegar
- 1/4 tsp. of salt
- 1 tsp. of vanilla




  



Combine water, sugar, vinegar, cream of tartar and salt. Boil. The mixture is ready when it forms a hard ball when placed in cold water (248 degrees on a thermometer). Add vanilla. Pour onto a buttered platter. When cool, pull until it becomes white and firm. Twist and cut in small pieces with scissors.

Partially roast or smoke pork or beef rib chops, then chill and slice between the bones. Grill to order with Clayton’s rubs.
