Acadian Salad


-Red, Orange and Yellow
  Peppers (Choose any 2)
-Radicchio
-Belgium Endive
-Butterleaf Lettuce

  

      Just as the Acadian history is a merging of French and English Traditions This Salad is a blend of different Shapes colors and flavors which when joined creates a taste delight.
      Cut open the Peppers clean out the inside seeds. Slice peppers into circles of about ¼ inch thick. Take Radicchio, Butter Lettuce and the Belgium Endive so that the red edges of the Radicchio are showing and insert into the 2 slices of peppers place on the plate so that the endive and the red edges of the radicchio are shown on top looking like a crown or a tiara at the very least.

FRUIT DRESSING
Serve with a drizzle of a creamy fruit dressing Fruit jam such as preserve peach or apricot preserve
Place the jam, into a sauté pan
Add ¼ teaspoon Dry Mustard and a tablespoon of Lemon juice
Bring to a foaming state sauce
Drizzle on the Plate
