Acadian Pork Roast


Begin with a Pork roast and cover it with your favorite Clayton’s Rub, then roll it on a bed of finely ground espresso coffee, and place in a 325O oven for 25 - 30 minutes per pound
The flavor of the spice will go into the roast, the coffee flavor will totally be lost in the roasting but the coating will keep all the natural pork juice in the roast and there will be less shrinkage, AND WHAT FLAVOR !
