Cabbage Soup


- 1 shank of beef
- 2 quarts of cold water
- 1 tbsp. of salt
- 1/4 tsp. of pepper
- 1 head of cabbage
- 2 cups of chopped
  onions or leek
- 1 cup of shredded
  carrots

  

Bring water to boil. Place shank of beef, onions, salt and pepper in boiling water. Keep removing scum from the top as it forms. Put on medium heat and cook for 3 hours. Add carrots and cabbage (core the cabbage completely and shred to thinly slices). Cover and simmer for 45 minutes.
