Omelet


- 1/3 c. of diced lard
  (also called “pork scraps”
   or “salt pork”)
- 4 eggs
- 1 tbsp. of water
- Pinch of salt & pepper

  

Fry the lard in a frying pan. Once the diced lard is browned, take out some of the grease. Add the eggs, water, salt and pepper to the pan. Cook mixture. If you wish, you can eat the omelet with maple syrup.
